- Rice cauliflower florets in food processor. You may have to do this in batches depending on the size of your food processor.
- Place riced cauliflower in a bowl lined with a clean kitchen towel.
- Squeeze out as much moisture as you can from the cauliflower and squeeze again. Get a second dry towel if needed.
- Beat eggs in small mixing bowl.
- Put all the ingredients including riced cauliflower that's been squeezed, beaten eggs and seasonings in a mixing bowl.
- Stir till thoroughly combined.

- ¼ tsp. black pepper
- 1 tbsp. olive oil

The goal is to remove as much moisture from cauliflower.
Meanwhile grate mozzarella cheese and set aside

Wish I could pot a pic. Turned out great. I added Italian seasoning to mix instead of basil, also about an eighth cup of Parmesan cheese. I flipped it back on parchment and baked dough another 10 minutes. Will let chill and do toppings tomorrow.

Stephanie, I have a question about using frozen riced cauliflower. You mentioned you would have to cook it first and then squeeze all the liquid out. Instead of cooking it could I just let it thaw out and squeeze out all the liquid?

Hi Suzie, you could certainly try that method if you like. But since I haven't done that I couldn't say for sure how well it would work in this recipe. I personally prefer to rice fresh cauliflower myself. Let me know if you try this method and how it works out.

Loved this recipe it was delicious. But make sure you get as much water out as you can.

Stephanie
Thanks Alleya and yes that is very important for getting the best crust possible. 🙂

Wow this is really good! Ive made cauliflower crusts before but the recipes say to steam which makes it soggy. This one worked great! And I love that there is one less step.
I used dairy free cheese and forgot to add olive oil to the mix but it still worked.
Thanks for the easy recipe.Reply
Stephanie
Thanks Leticia 🙂 and you're Welcome! So Glad you liked it and the olive oil is just to help the crust from sticking to the pan.

Summer
What do you do with the second cup of mozzarella cheese? I only see directions to add one cup to the mixture before baking.
Stephanie
Hi Summer, the second cup is a topping on the pizza crust.
Connie
What kind of dairy free cheeses did you use?

Dayna
Is the crust suppose to be really moist once cooked?
Reply
Stephanie
Hi Dayna, the crust should not be really moist when cooked although it definitely doesn't have the same texture as traditional pizza crust. Did you make sure that after you riced the cauliflower you squeezed all the excess liquid out of it?
Reply
Brittany
What is the best way to store it in the freezer?
Stephanie
Hi Brittany, you need to make sure you cook the cauliflower crust first and allow it to cool completely. Once the crust is cool set it on a pan and put in the freezer till frozen solid and then store it in an airtight container or freezer safe ziplock bag.
Stephanie
Thanks Gale! I'm sooo glad you & the husband loved it. It's definitely one of my favorites 🙂
Reply
Gale
Well, it's delicious. My husband couldn't believe it was cauliflower! Loved it
Reply
Ashley
If you buy the cauliflower already, about how much would you estimate I use?
Reply
Stephanie
Ashley you want to use approximately 3 1/2 cups of riced cauliflower! It's a small to medium head of cauliflower. Hope this helps 🙂

Sharon Thompson Smith
if you don't cook the cauliflower first, why would there be a need to squeeze water out of it?
Stephanie
There will still be some liquid in the cauliflower once you rice even though it's not cooked.
John
Can you make the crust the day before you want to use it?
Reply
Stephanie
John you could definitely make the crust a day ahead. Just make sure once you cook it that you let it cool thoroughly and then cover and put in the fridge. Hope that answers your question 🙂

Silly question but how wide should the pie be?
Reply
Stef
No question is silly Vanessa and it really depends on how thick you like the crust. I would say anywhere between 10-14 inches.
Reply
Stef
Hi Lindy, you could also rice the cauliflower with a box grater. Just make sure to squeeze out as much liquid between paper towels or a kitchen towel once grated. Hope this helps 🙂

I don't have a food processor. I know, that's awful. My husband is a disabled veteran and we just haven't been able to afford one 🙁 How else can I rice the cauliflower?

I'm sure by now you know that Trader Joe's and a lot of the grocery store sell it, I was just at Ralphs..they had it riced
I can't wait to try this

Hi Joan and yes you can definitely buy riced cauliflower at a lot of stores now which is a big convenience for many people. I still prefer to make my own though since it's always fresher tasting. Hope you get a chance to try this soon. BIG fan of Trader Joe's and I've seen their riced cauliflower 🙂

I didn't see any instruction for baking the cauliflower. Do you really use it raw?
Reply
Stef
Yes! Just rice it and mix it with other ingredients before shaping into pizza shape. Then bake pizza crust. Hope this helps.

Tried this last night. Pizza stuck to paper, any idea why?
Reply
Stephanie
Hi Alicia, did you remember to generously grease paper with olive oil? Also did you allow it to cool slightly before cutting? I've never had one stick so I'm not exactly sure where you went wrong. Hope this helps 😀
Ashley
My crust crumbled apart. Is the cauliflower suppose to be cooked before drained?
Stephanie
Hi Ashley, And no you don't cook the cauliflower prior to cooking the crust. You need to use fresh riced cauliflower in which you've squeezed all the liquid out of... did you follow the recipe directions EXACTLY? I'll be glad to help you troubleshoot the recipe if you'd like.
